Too many car classes and not enough players. Im not sure how others feel about it but in my opinion its not fun sitting in the lobby staring at your screen waiting for that one racer to show up and then he leaves. "Quick race" should work differently, everyone who joins gets the same car(random) and score. Or atleast make it possible to que up for "Quick race" while driving in freerun.
Quick race works fine if enough people are online and want to race. Mostly people with car score 190-280 join the quick races, that's where you will have most luck and find enemies quickly.
All scores above that are pretty unused in that race type. Because players rather like to drive longer races or create their own in Custom Race. Try it yourself. You can even set room score limits there too.

+1 on this, I would love this idea to be implemented. It would be good if lobbies could dynamically fill up during playing, and you could jump into a quick race at any time as long as 4 players are available.
